Ray’s question to Karen:
Q: We’re one month into 2022, but before we look forward, take a moment to look back. What were some of your favorite cooking experiences in 2021?
A: I have to say I really enjoyed joining in with the rainydaybites cooking club on Instagram. I made some things I probably never would have and things I’ve always wanted to make, but never got around to. All this while getting lots of foodie love and support. What could be better than that?
Karen’s Question to Ray:
Q: Is there any one cooking goal for you this year that you have resolved to do/learn?
A: I have made several different kinds of bread over the years, but one of my favorite breads is ciabatta and I have yet to try it because it is a fairly long process. Well, that’s not totally true – I did try it once many years ago, but the yeast I had on hand was a bit too old and the starter never took off.
You need to give the biga starter 12 to 16 hours to slowly rise and develop before continuing the process. I woke the next morning to find a flat soupy unrisen mess – that’s all it takes to bring the adventure to an end! As I sit typing this, we are in the middle of a blizzard warning here in the northeast – perhaps this would be a great time to try again! Stay tuned….
